種まき時期は9月～10月、収穫までは約100日です。フランスの地名「サボイ」が名前の由来です。葉が縮れていることから「ちりめんキャベツ」とも呼ばれています。通常のキャベツより小ぶりで水分が少なく生食では甘みが少ないのが特徴。適度な弾力と葉の縮みがあるためロールキャベツなど煮込み料理にぴったりの品種です。
