新潟伝統の平型中カブで抽苔が遅いので｢越後時無しカブ｣とも呼ばれています。肉質が柔らかく甘味に富んでいて、根だけでなく葉も美味しく食べられます。新潟市寄居町白山外新田で300年前から栽培されていた品種で、近江カブから生じたとも、天王寺カブから生まれたとも言われています。
